Ingrédients

600 g 

de farine mi-blanche

250 g 

de farine d’épeautre claire

150 g 

de farine complète

26 g (3 c.c.)

de sel

6 ¾ dl 

de mélange eau-lait tiède

20 g 

de levure

Recette

Dissoudre la levure dans le mélange eau-lait. Pétrir tous les ingrédients ensemble.

La pâte devrait être plutôt humide. Laisser monter la pâte pendant 3 à 4 heures. Former une saucisse de pâte et en faire un noeud.

Mettre dans le four froid et cuire pendant 30 minutes au four chauffé à 175° C. Finir de cuire pendant encore 10 minutes à 200° C.
